Berry Ice Lollies 

Makes 10 lollies

 Ingredients 

  • 1¾ cups low fat milk
  • 1 to 2 tablespoons honey
  • ¼ teaspoon vanilla extract
  • 1½ cups fresh raspberries
  • 1 cup fresh blueberries
  • 10 ice lolly moulds

 Method 

  1. Warm ¼ cup of milk in the microwave. Stir in the honey until blended. Add the remaining 1½ cups of milk and vanilla.
  2. Divide the berries among the moulds. Cover with the milk mixture.
  3. Top the moulds with the lids.
  4. Freeze until firm. 

Berry/Clementine Yoghurt Lollies

Makes 10 lollies

 Ingredients 

  • 2¾ cups low-fat plain yoghurt
  • 1 cup mixed fresh berries or clementines
  • ¼ cup water/ berry or orange juice (if using juice, omit the sugar)
  • 2 tablespoons honey
  • 10 ice lolly moulds (if you don’t have moulds, use plastic cups and wooden sticks)

 Method 

  1. Fill each cup with about ¼ cup yogurt.
  2. Place the berries or clementines, water or juice and sugar in a food processor.  Pulse until berries or clementines are finely chopped.
  3. Spoon 1½ tablespoons berry mixture into each cup. Stir gently with a stick to swirl.
  4. Top the moulds with the lids.
  5. Freeze until firm.
