Berry Ice Lollies
Makes 10 lollies
Ingredients
- 1¾ cups low fat milk
- 1 to 2 tablespoons honey
- ¼ teaspoon vanilla extract
- 1½ cups fresh raspberries
- 1 cup fresh blueberries
- 10 ice lolly moulds
Method
- Warm ¼ cup of milk in the microwave. Stir in the honey until blended. Add the remaining 1½ cups of milk and vanilla.
- Divide the berries among the moulds. Cover with the milk mixture.
- Top the moulds with the lids.
- Freeze until firm.
Berry/Clementine Yoghurt Lollies
Makes 10 lollies
Ingredients
- 2¾ cups low-fat plain yoghurt
- 1 cup mixed fresh berries or clementines
- ¼ cup water/ berry or orange juice (if using juice, omit the sugar)
- 2 tablespoons honey
- 10 ice lolly moulds (if you don’t have moulds, use plastic cups and wooden sticks)
Method
- Fill each cup with about ¼ cup yogurt.
- Place the berries or clementines, water or juice and sugar in a food processor. Pulse until berries or clementines are finely chopped.
- Spoon 1½ tablespoons berry mixture into each cup. Stir gently with a stick to swirl.
- Top the moulds with the lids.
- Freeze until firm.
