Serves 3-6 

Ingredients 

  • 3 medium ripe nectarines, halved and pitted
  • 180g burrata cheese (Checkers stocks this cheese)
  • 2 tablespoons honey
  • Fresh mint leaves
  • Salt

Method 

  1. Place the nectarine halves on a tray, cut sites up. Heat a grill. Grill the nectarine halves until just tender, about 4-5 minutes 
  2. Drain the burrata and cut into 6 even slices 
  3. Arrange the grilled nectarine halves cut side up on a serving platter 
  4. Top with burrata, a drizzle of honey, mint and a sprinkle of salt 
  5. Enjoy!
