Serves 1
Ingredients:
- 1 ripe banana
- 2 eggs
- ¼ cup oats (raw) – use a bit more if you want a thicker consistency
- Pinch of salt
- Pinch of cinnamon
- 1 tbsp peanut butter/ nuts/ chocolate chips etc. (optional)
- Oil for cooking
Method:
- Mash the banana with a fork
- Whisk in the eggs, oats, salt, cinnamon until smooth
- Add the peanut butter/ nuts etc. and swirl into the batter
- Heat a tbsp. of oil in a pan over medium-low heat
- Add the batter and cook for about 2 minutes, until set
- Turn and cook on the other side for another 30 seconds
- Serve with fruit and/or yoghurt and a tbsp. of maple syrup or honey
- Enjoy!
Notes:
- Can be stored in the refrigerator for up to 3 days. Microwave the pancakes for 5-10 seconds to enjoy
- The cooked pancakes can also be frozen. Microwave from frozen for 20-30 seconds before serving
