Serves 1 

Ingredients: 

  • 1 ripe banana
  • 2 eggs
  • ¼ cup oats (raw) – use a bit more if you want a thicker consistency
  • Pinch of salt
  • Pinch of cinnamon
  • 1 tbsp peanut butter/ nuts/ chocolate chips etc. (optional)
  • Oil for cooking

 

Method: 

  1. Mash the banana with a fork
  2. Whisk in the eggs, oats, salt, cinnamon until smooth
  3. Add the peanut butter/ nuts etc. and swirl into the batter
  4. Heat a tbsp. of oil in a pan over medium-low heat
  5. Add the batter and cook for about 2 minutes, until set
  6. Turn and cook on the other side for another 30 seconds
  7. Serve with fruit and/or yoghurt and a tbsp. of maple syrup or honey
  8. Enjoy!

 

Notes: 

  • Can be stored in the refrigerator for up to 3 days. Microwave the pancakes for 5-10 seconds to enjoy
  • The cooked pancakes can also be frozen. Microwave from frozen for 20-30 seconds before serving
